Hi Everyone!

My family has gone on a mini vacation so I have the house to myself this weekend!! Yay!! 😀 I just love the peace and quiet and that I could spend the day in PJs if I wanted 😉 And the weather is perfect, so I know what I’ll be doing in the afternoon: soaking up the sun with a great book 😀 But first I’ll be cooking. You might know that I LOVE cooking and baking, and we have a small herb garden. Yesterday morning I thought it was time to harvest our basilic, oregano, thym and mint, so the kitchen was full of the enticing scent of freshly chopped herbs. And you want to know what I did with them? I made some virgin mojito (=minty lemonade) and minty pea cream soup, a meal I discovered this week at a restaurant and one I instantly fell in love with. And it was just as delicious, so even though it sounds strange, I urge you to try it, the perfect soup for a hot summer lunch! (serve it chilled and with the mint it will be wonderfully refreshing).
